Vanilla Sugar Cookies

One of the things I love about Christmas are the handmade little goodies that you receive and give, it makes the thought all the more special. I have a great time baking with my children and these little vanilla sugar cookies are always fun to do. At this time of year we give them to neighbours and as tokens for my boys to take on play dates. They’re super easy and always well received.

This recipe is from an old well-used cookbook, Marie Claire Cooking by Donna Hay.

Vanilla Sugar Cookies

185g (6 oz) butter

1 cup caster (superfine) sugar

1 ½ teaspoons vanilla extract

2 ½ cups plain flour

1 egg

Place butter, sugar and vanilla extract in a food processor and process until smooth. Add flour and egg, and process until a smooth dough forms.

Knead dough lightly, wrap it in plastic wrap and refrigerate for 30 minutes. Roll dough on sheets of non-stick baking paper until it’s approximately 5mm (1/4 inch) thick. Cut dough into desired shapes using cookie cutters and place shapes on baking trays.

Bake cookies in a preheated 180°C (350°F) oven for 10-12 minutes or until they are light golden. Cool cookies on racks. Makes approximately 30 cookies.
